Selada Banjar

Selada Banjar yang disajikan bersama potongan daging sapi dimasak bistik dan saus.

Selada Banjar adalah makanan berupa campuran jenis sayur rebus yang disajikan bersama potongan daging sapi bistik dengan siraman saus yang berasal dari Kalimantan Selatan. Penamaan selada berasal dari sayuran yang digunakan yaitu mentimun yang diselada atau diparut memanjang. Makanan ini juga dikenal dengan seladanya orang banua dan biasanya disajikan sebagai makanan pembuka dalam hajatan besar oleh orang di Banjarmasin[1] atau acara-acara resmi seperti pernikahan adat Banjar di masa lalu.[2]

Makanan yang satu ini memang bukan khas Banjar, namun menjadi salah satu hidangan berbuka atau makan malam favorit warga Banjarmasin saat bulan puasa. Meski berasal dari hidangan Eropa, namun kembali populer di Banjarmasin beberapa tahun belakangan ini.[3]

Tampilan Selada Banjar mirip dengan selat solo, namun yang membedakannya adalah selada Banjar tidak berkuah dan tidak menggunakan telur pindang atau kentang goreng. Seporsi selada banjar terdiri dari bistik daging yang disajikan bersama sayur-sayuran rebus, telur rebus, dan emping.[4]

Pembuatan

Selada Banjar memiliki cita rasa manis gurih yang berasal dari garam dan kentang rebus. Selain itu juga digunakan bahan seperti bawang merah, bawang putih, jahe, kayu manis, kacang polong, kentang, timun, wortel, daging dan sebagainya. Bahan lainnya adalah kecap dan rempah dari kuah bistik sebagai saus.

Namun untuk sausnya sendiri menggunakan kuning telur rebus, kentang rebus dan lada.

Untuk pembuatannya cukup mudah dimana semua bahan dicampurkan jadi satu, sedangkan bahan yang dimasak hanya kuahnya, telur rebus, bawang goreng dan daging ayamnya. Untuk sayuran disajikan mentah dan dikupas serta dipotong kecil.[3]
