Itak gurgur

Itak Gurgur adalah makanan tradisional khas Batak yang pada umumnya digunakan pada acara adat Batak tertentu.

Itak gurgur dibuat dengan bahan yang sama dengan lampet, yaitu beras yang telah dihaluskan secara tradisional yang kemudian disebut itak. Rasa yang dihasilkan juga hampir sama dengan lapet, yaitu manis dan gurih.

Namun cara membuat itak gurgur berbeda dengan cara membuat lampet. Itak gurgur dibuat dengan cara yang sangat sederhana, yaitu dengan mengadon itak, kelapa muda yang telah diparut, gula pasir, dan sedikit air panas. Setelah dicampur sampai rata, kemudian adonan tersebut dicetak secara manual dengan tangan sendiri. Sudah, begitu saja. Itak Gurgur pun siap dihidangkan.

Kata gurgur di sini dapat diartikan sebagai “membara”. Pemberi itak gurgur selalu berharap si pemakan jadi memiliki semangat yang membara-bara. Agar benar-benar membara, itak gurgur dapat dikukus setelah dicetak.
