InchDairnie destilleri er et Lowland single malt skotsk whisky- og ryewhiskydestilleri i Glenrothes, Skotland.

Historie

InchDairnie destilleri blev grundlagt i 2015 af Ian Palmer,[1] en tidligere professionel i whiskyindustrien, i Glenrothes på området, hvor den gamle John Fergus & Co-mølle lå.[2] Virksomheden fik navnet John Fergus & Co.[3]

Mellem 2017 og 2019 opførte InchDairnie yderligere otte lagringsbygninger til modning samt et anlæg til blanding af whisky.[4]

I 2017 begyndte InchDairnie at producere ryewhisky i en traditionel skotsk pot still og lagret på nye amerikanske egetræsfade.[5] Whiskyen blev lanceret i april 2023 under navnet RyeLaw.[6]

I 2022 købte destilleriet næsten 5 hektar jord på Osprey Road i Glenrothes for at opføre et spirituslager.[7]

I november 2024 besluttede destilleriet at øge sin kapacitet fra to millioner til 4 millioner liter alkohol om året samt at skifte fra naturgas til 100 % grøn brint.[8]

I maj 2025 lancerede InchDairnie Distillery sine første to single malts.[9]
