مشروب "كفاس"

كفاس Kvass هو مشروب سلافى تقليدى مخمر يصنع فى العاده من خبز الجاودار،[1] والمعروف فى الكتير من دول اوروبا الشرقية وخاصه فى أوكرانيا وروسيا باسم الخبز الأسود. يساهم لون الخبز المستخدم فى لون الشراب الناتج. ويصنف على أنه مشروب غير كحولى حسب المعايير الروسيه، علشان محتوى الكحول من التخمير فى العاده ما يكون منخفضا (0.5-1.0٪).[2] و يطعم بنكهة الفواكه زى الفراولة والزبيب، أو مع الأعشاب زى النعناع.

وله شعبيه خاصه فى معظم البلاد السلافية الشمالية، بما فيها أوكرانيا و بولندا وصيربيا، لكن ليس فى جمهورية التشيك أو سلوفاكيا. و هو معروف كمان فى بلاد البلطيق. الكفاس هو كمان ذو شعبية فى كل اماكن منغوليا وجورجيا و أذربيجان وطاجيكستان وكازاخستان و أوزبكستان وارمينيا. ويوجد الكتير من البياعين اللى يبيعون الكفاس فى الشوارع.[3] و هو كمان ذو شعبية فى مناطق هاربن [4] وشينجيانغ فى الصين، حيث يظهر تأثير الثقافة الروسية.
