Die Cathay Pacific Hong Kong Open 2000 fanden vom 29. August bis 3. September 2000 in Hongkong statt. Das Squashturnier der Herren war Teil der PSA World Tour 2000/01 und war mit 125.000 US-Dollar dotiert.

Titelverteidiger war Peter Nicol, der in diesem Jahr erneut das Endspiel erreichte. Dort traf er wie im Vorjahr auf Jonathon Power. Mit 15:11, 15:10 und 15:6 gewann Nicol das erneute Aufeinandertreffen und sicherte sich so seinen zweiten Titelgewinn bei diesem Turnier.

Das Teilnehmerfeld der Herrenkonkurrenz bestand aus 32 Spielern, davon acht Plätze für Qualifikanten. Die 16 besten Spieler wurden gesetzt. Per Wildcard erhielt Abdul Faheem Khan einen Startplatz im Hauptfeld.
