Руская кухня — кулінарныя традыцыі рускага народа. Мае шмат рэгіянальных варыяцый і запазычанняў з іншых кухань. Адметнай рысай рускай сялянскай кухні — адсутнасць прыёму прыгатавання смажання. Як правіла, ежа гатавалася ў печы, таму вельмі шырока выкарыстоўвалася варэнне, тушэнне. Таксама для рускай кухні характэрна нарыхтоўка гародніны і пладоў пры дапамозе квашання, салення і мачэння. Для сучасных варыянтаў рускіх страў смажанне з'яўляецца раўнапраўным працэсам гатавання — смажаныя бліны і аладкі, яйкі, многія віды мясных страў.

Закускі

Святочнае застолле пачынаецца з халодных страў: салатаў (аліўе, селядзец пад шубай, яечны салат), нарэзка з гародніны, ікра, бутэрброды з каўбасой, шпротамі, ікрой. Вялікае значэнне надаецца сервіроўцы стала.

Супы

Руская кухня багатая на супы, асабліва папулярныя — салянка, расольнік, уха, шчы, акрошка (халодны суп: гатуецца з квасу і кефіру, куды дадаюць варанае мяса, агуркі, зеляніну і сечанае яйка). Супы пераважна ядуць з чорным хлебам, прыпраўляюць смятанай.

Мяса

У рускай кухні выкарыстоўваюцца розныя віды мяса — свініна, ялавічына, бараніна, хатняя птушка і ўсе віды дзічыны (ласіна, дзікая качка, заяц). Шырока распаўсюджаны ў рускай кухні стравы з здробненага мяса — розныя разнавіднасці катлет, біточкаў, каўбас. Напрыклад пажарскія катлеты, ялавічына па-строганаўску, цяляціна «Арлоў».

Дэсерты

З дэсертаў папулярнымі салодкія мучныя вырабы: калачы, пернікі (гл.Тульскі пернік), бублікі, таксама варэнне і мёд. Традыцыйным дэсертам рускай кухні з'яўляюцца печаныя яблыкі.

Напоі

Чайныя традыцыі ў Маскоўскай дзяржаве пачалі развівацца з 16-17 стагоддзя. Да чаю з самавара ставілі парэзаныя лімоны, цукар, мёд, малако, а таксама пернікі, сушкі, пірагі, кулебякі. Папулярнымі ў мінулым былі квас, збіцень. Традыцыйнымі алкагольнымі напоямі з'яўляюцца медавуха, гарэлка.
