Украінская кухня вызначаецца разнастайнасцю страў і высокімі смакавымі якасцямі. Гэта абумоўлена як вялікай колькасцю прадуктаў, што традыцыйна выкарыстоўваюцца, так і спосабамі іх кулінарнай апрацоўкі. Напрыклад, у склад украінскага баршчу ўваходзяць да двух дзесяткаў найменняў прадуктаў, якія абсмажваюць, тушаць, пякуць, вараць. Для ўкраінскай кухні характэрна значная колькасць варыянтаў адной той жа стравы. Так, існуе да 40 відаў гарачых і халодных баршчоў. Надзвычай папулярныя галушкі гатуюць з пшанічнай і грэцкай мукі, з бульбы і тварагу, з заварнога цеста і хлебных сухароў.

Ва ўкраінскай народнай кухні шмат страў і вырабаў з мукі. Гэта, акрамя галушак, варэнікі, блінцы, пампушкі, шулікі, лямешкі, вергуны, салажэнікі, папушнікі, мандрыкі, пухкенікі і інш. Не менш распаўсюджана і агародніна, у першую чаргу буракі — абавязковы кампанент многіх гарачых і халодных страў. Шырока выкарыстоўваюцца бульба, морква, капуста, фасоля, гарбуз.

З мясных прадуктаў перавага аддаецца свініне. Сала выкарыстоўваецца ў многіх стравах: мясных, з агародніны, нават салодкіх. Салам шпігуюць любое мяса, акрамя свінога, тоўчаным салам запраўляюць баршчы. Яго ядуць салёным, вэнджаным, сквараным. Гатуюць таксама стравы з ялавічыны і свойскай птушкі.

Украінская кулінарыя мае багата страў з малочных прадуктаў і яек. Яйкі ўваходзяць у большасць мучных і салодкіх страў. Апошнія часцей за ўсё гатуюць з садавіны і ягад у выглядзе салатаў, узвараў, халаднікоў, піннікаў.
