必需氨基酸

必需氨基酸（essential amino acid (EAA)、indispensable amino acid (IAA)），指動物不能在體內自行合成，只能由食物中攝取，或者體內雖然能够合成，但是合成量仍不及所需，要額外補充的氨基酸。動物需攝取必需氨基酸以製造蛋白質。由於不同物种的化合能力不同，對於某一物种是必需氨基酸的，對另一物种則不一定是必需氨基酸。

人類必需

食物中如果含有所有的必需氨基酸，稱為完全蛋白質。肉類中的蛋白質是完全蛋白質，可以提供人體所需的全部胺基酸種類，大概在牛肉、羊肉、豬肉、雞肉等都有蘊藏，素食者則必須留意飲食，設法由黃豆、黑豆、四季豆、花生、核桃等攝取，或者以蛋奶素食主義較為適合。

人體無法合成的9種胺基酸包括：

1. 苯丙胺酸 （Phenylalanine）(Phe)
2. 纈胺酸 （Valine）(Val)
3. 蘇胺酸（羥丁胺酸)（Threonine）(Thr)
4. 色胺酸 （Tryptophan）(Trp)
5. 異白胺酸 （Isoleucine）(Ile)
6. 亮胺酸 （Leucine）(Leu)
7. 甲硫胺酸 (蛋氨酸)（Methionine）(Met)
8. 離胺酸 （Lysine）(Lys)
9. 組胺酸 （Histidine）(His)

过去人们曾认为组氨酸只針對嬰幼兒是必需的，然而后续較長期的研究表明，它也是成年人必不可少的必需氨基酸。^[1]
