உமிழ்நீர்

உமிழ்நீர் (ஒலிப்புⓘ) என்பது வாயில் ஊறும் நீர்மம். இது நாம் உண்ணும் உணவை எளிதாக உட்கொள்ள உதவுமாறு ஈரப்படுத்தியும், உணவைச் செரிக்க உதவும் அமிலேசு என்னும் நொதியம் கொண்டதாகவும் உள்ள வாயூறுநீர் ஆகும். தமிழில் உமிழ்நீர் என்பதை எச்சில், வாயூறுநீர், வாய்நீர் என்றும் சொல்வர். ஒரு நாளைக்கு மாந்தர்களின் வாயில் 1-2 லீட்டர் அளவு உமிழ்நீர் சுரக்கின்றது. உமிழ்நீர் சுரத்தல் பிற முதுகெலும்புள்ள விலங்குகளிலும் உண்டு. மாந்தர்களின் வாயில் உள்ள மூன்று பெரிய உமிழ்நீர்ச் சுரப்பிகளும் (படத்தைப் பார்க்கவும்), நாக்கு, கன்னம் (கன்னக் கதுப்பு), உதடு, மேலண்ணம் போன்ற பகுதிகளில் உள்ள சிறுசிறு சுரப்பிகளும் உமிழ்நீரை வாயில் ஊறச் செய்கின்றது. உணவின் மணம் உணர்ந்தாலேயே வாயில் உமிழ்நீர் சுரத்தல் இயல்பாக நடத்தல்.

உமிழ்நீரானது உணவை ஈரப்படுத்தி உட்கொள்ளவும், செரிமானம் செய்யவும் உதவுவது மட்டும் அல்லாமல், நாவை அசைத்து மொழி பேசவும் உதவுகின்றது. உமிழ்நீர் உணவுத் துகள்களைக் கரைப்பதால் உணவின் சுவை உணரப்படுகின்றது. உடலில் நீரின் அளவைக் கட்டுப்படுத்தவும் உதவுகின்றது. உடலில் நீரின் அளவு குறைந்தால், நா வரண்டு போவது, உமிழ்நீர் குறைவதாலேயே. இதலால் நீர் அருந்த குறிப்பு தருகின்றது. உமிழ்நீர் பற்களின் நலம் கெடாமலும், உணவுத்துணுக்குகள் வாயுள் கிடந்து பிற நுண்ணுயிர்களால் நோய் உண்டாக்காமல் வாயில் இருந்து நீக்கியும் உதவுகின்றது. உமிழ்நீரில் உள்ள அமிலேசு என்னும் நொதியம் மாவுப்பொருளான கார்போஹைடிரேட்டுகளை வேதியியல் முறையில் பிரித்து செரிப்பதற்கு எளிமையான பொருளாக மாற்ற உதவுகின்றது.

உமிழ்நீரில் உள்ள உட் கூறுகள்

உமிழ்நீரில் 98% நீர்தான் எனினும், சிறிதளவு பல்வேறு முக்கியமான பொருட்களும் அடங்கியுள்ளன.

இதில் அடங்கியுள்ள உட் கூறுகளின் முக்கியமானவைகளை கீழே காணலாம் [1]:

  • பல நொதியங்கள் உள்ளன. முக்கியமானவை மூன்று.
    • α-amylase (EC3.2.1.1). அமிலேசு மாவுப்பொருள் மற்றும் லிப்பேசு என்னும் கணையத்தில் இருந்து பெறப்படும் நொதியம் செரிமானத்தைத் தொடங்குகின்றது. இதன் pH optima மதிப்பு 7.4
