அகார்

Mizuyōkan - அகாரில் இருந்து செய்த நிப்பானிய சிவப்புப்பயற்றுக் களி

அகார் அல்லது ஏகார் (Agar) அல்லது அகார் அகார் (agar agar) என்பது கடற்பாசி அல்லது கடற்செடியில் இருந்து செய்யப்படும் கெட்டியான களி போன்ற கூழ்மப் பொருள். இதனை சப்பான் மக்கள் தங்கள் சுவை உணவுகளின் ஒன்றாக உண்கின்றனர். ஆனால் கடந்த ஒரு நூற்றாண்டாக இது உயிரியல், நுண்ணுயிரியல் ஆய்வகங்களில் நுண்ணியிரிகள் வளரும் வளர்ப்பூடகமாகப் பயன்படுகின்றது. இதனை களி போன்ற மெதுமையான கூழ்மப்பொருளாக மாற்றுவது சிவப்புப் பாசியின் (red alga) உயிரணுக்களின் கலச்சுவர்ப்பொருளில் இருந்து பெறும் கூட்டுச்சர்க்கரை (polysaccharide) ஆகும். இந்தச் சிவப்புப் பாசி பெருமுதலாக செலிடியம் (Gelidium), கிரேசிலாரியா (Gracilaria) அல்லது பொதுவாக கடற்பாசி (seaweed) என்றழைக்கப்படும் இசுபெரோக்காக்கசு யூக்கீமா (Sphaerococcus euchema) ஆகியவற்றில் இருந்து பெறுவது. வணிகத்தில் விற்கப்படும் பொருள் செலிடியம் அமான்சியி (Gelidium amansii) என்பட்தில் இருந்து பெறுவது.

ஆய்வகத்தில் பயன்படும் 100 மிமி விட்டப் பெற்றிக் கிண்ணிகளில் (petri dishes) அகார் களிக்கூழ்மம் பூசப்பட்டுள்ளது. இவை பாக்டீரியாக்களைத் தொழுதிகளை வளர்க்கப் பயன்படுகின்றன.

அகார் அல்லது அகார் அகாரென்பதை வயிற்றுப்போக்கு உண்டாக்கப் பயன்படுத்தலாம். இதனை சூடான சூப் (குழம்பு) போன்றவற்றின் அடர்த்தியைக் கூட்ட பயன்படும் ஒரு தாவரப் பொருளாகவும் பயன்படுத்தலாம்.[1][2][3]

வேதியியல் நோக்கில் அகார் என்பது காலக்டோசு (galactose) என்னும் ஒற்றைச்சர்க்கரையின் ஒரு பலபடி. இப்பலபடிச் சர்க்கரை, பாசியின் (algae), உயிரணுச் சுவருக்கு கட்டுமான வலுசேர்க்கும் பொருளாக இயங்குகின்றது
