Rochefort er et bryggeri i Notre Dame de St. Remy, et kloster like utenfor Namur i regionen Vallonia i Belgia, som lager trappistøl.[1] Klostret som tilhører trappistordenen (opprinnelig en gren av Cistercienserordenen) er blant de få klosterne som får kalle ølet sitt for trappistøl. Ølproduksjonen er på cirka 18 000 hektoliter per år.

Historie

Den første bryggerivirksomheten i klostret skjedde allerede i 1595 av cisterciensermunker.[1] Gjennom århundrene har klosteret utvidet og blitt gjenoppbygget flere ganger. Den siste ødeleggelsen skjedde i 1789 og den siste gjenopbyggningen var i 1887.[trenger referanse] Ølproduksjonen ble gjenopptatt i 1899.[2]

Navnet på ølene reflekterer den lokale måleenheten for sukkermengden i vørteren, "Belgiske grader".[4]
