Merguez (مرقاز; 'mɛʁɡəz) is a spicy kind of sausage, that originally came from the Maghreb region. Originally it was made entirely of mutton/lamb. Today it is made of a mixture of beef and lamb. These sausages are meant to be fried. As the Arabic population moved elsewhere, they also brought the sausage with them. For this reason it is also commonly found around the Mediterranean and in most of Europe.
