Kambodžas virtuve

Mūsdienu kambodžiešu restorāna maltīte četrām personām ar tvaicētiem rīsiem, skābo garšaugu zupu (samlar machu kroeung), balzambumbieru omleti, apceptu paipalu un vistas gaļu, strauji apceptu zivi saldskābajā mērcē un saldo zivju mērci ar ķiplokiem un čili pipariem

Kambodžas virtuve ir visām Kambodžā dzīvojošajām tautām raksturīgo ēdienu un to gatavošanas īpatnību kopums. Kambodžas virtuvē nozīmīgu lomu ieņem gandrīz divtūkstoš gadu senā khmeru virtuve (khmeru: សិល្បៈធ្វើម្ហូបខ្មែរ — 'khmeru pavārmāksla'), bet atsevišķi izdalāma arī Kambodžas ķīniešu jeb sinokhmeru virtuve, kas ir atšķirīga gan no khmeru, gan ķīniešu virtuves.[1]

Gadsimtu gaitā khmeru virtuve ir aizguvusi indiešu, ķīniešu,[2] portugāļu[3] un franču virtuves[4] elementus un mijiedarbojusies ar citu kaimiņos esošo Dienvidaustrumāzijas tautu virtuvēm, tādējādi mūsdienu khmeru virtuvei ir daudz līdzību ar Taizemes vidienes, Vjetnamas dienvidu un mazākā mērā arī Vjetnamas vidienes, Taizemes ziemeļaustrumu un visas Laosas virtuvi. Khmeru virtuves divas galvenās sastāvdaļas ir pūdētu zivju pasta (ប្រហុក, prâhŏk) un svaigu garšaugu pasta (គ្រឿង, krœăng).
