Mulgio košė (est. Mulgipuder) – kasdieninis patiekalas, košės atmaina estų virtuvėje, kilusi Mulgio regione, bet nuo XIX a. pabaigoje valgoma visoje Estijoje. Laikoma vienu iš estų nacionalinių patiekalų. Jis gaminamas bulves ir miežių kruopas verdant kartu ir sugrūdant.

Dėl savo svarbos estų kultūroje, šimtmečius besitęsiančios tradicijos, šios košės virimo tradicija 2024 m. įrašyta į UNESCO nematerialaus pasaulio paveldo sąrašą[1].

Gamyba ir patiekimas

Mulgio regionas Esijoje

Ši košės variacija yra tradiciškai paplitusi pietvarkarių Estijoje, tradiciniame Mulgio regione (est. Mulgimaa), kuris apima Viljandžio ir Valgos apskričių dalys, į vakarus nuo Vertsjervo ežero. Čia košė nuo XIX a. verdama kaip sotus kasdieninis patiekalas, gaminamas iš ilgai išsilaikančių produktų.

Gaminant šią košę bulvės verdamos kartu su mirkytomis miežinėmis kruopomis, kol suminkštėja. Tradiciškai virimui naudota malkomis kūrenama krosnis, kurią dabar pakeitė viryklė. Seniau daugiausiai naudotos kvietinės kruopos, tačiau sovietmečiu dėl maisto produktų trūkumo jos pakeistos miežinėmis. Išvirti ingredientai sugrūdami į košę. Ji uždaroma spirgučiais ir kepintais svogūnais. Moderniose atmainose gali būti uždaroma pienu ar sviestu, gardinama krapais ar česnaku. Paprastai košės pagaminama kelioms dienoms, nes pastovėjusi ji tampa dar gardesnė. Kitą dieną ji gali būti skiedžiama ir valgoma kaip sriuba, arba pašildoma keptuvėje. Košė dažniausiai užgeriama pienu ar kefyru.

Košės virimas Estijoje tęsiamas šeimose, perduodamas jaunajai kartai. Mulgio regione vyksta košės virimo pamokos, ji yra tiekiama vaikų darželiuose, švenčių metu. Estijoje nuo 2006 m. Mulgio košė prekybos centruose parduodama jau pagaminta. Tačiau dauguma estų labiau mėgsta ją virtą namuose, nei pirktą. 2018 m. apklausa rodo, kad 26% respondentų gamina šią košę rečiau nei kas mėnesį, 47% bent kartą per mėnesį, ir 4% bent kartą per savaitę[2].
