Il boxty è una frittella di patate irlandese, tipica soprattutto di contee a nord del paese quali quelle di Cavan, Fermanagh, Derry e Tyrone.[1][2] A seconda dei casi, i boxty possono presentarsi sotto forma di pancake o di gnocchi.[1]

Etimologia

La parola boxty proviene dall'irlandese bacstaí, parola a sua volta derivata da bacús, termine indicante un utensile da forno,[1][3] o, secondo un'altra interpretazione, da arán bocht tí (lett. "ospizio dei poveri").[2][3]
