Saus Sacha ( Hanzi: 沙茶; Pe̍h-ōe-jī: sa-te ; dalam bahasa Mandarin : sa cha ) adalah bumbu gurih dan sedikit pedas yang digunakan dalam masakan hidangan Teochew, Fujian serta Taiwan. Terbuat dari minyak kedelai, bawang putih, bawang merah, cabai, brill Cina, dan udang kering.[1][2] Hal ini juga kadang-kadang dijual sebagai "saus barbeque Cina".[3][4]

Saus shacha digunakan dengan berbagai cara; sebagai bahan dasar sup, olesan daging barbeque, saus celup (untuk hot pot), atau bumbu untuk tumisan. Itu juga disertakan dengan mie instan yang diproduksi di Vietnam, dalam paket mereka sendiri bersama paket dasar sup, sayuran kering, atau bumbu lainnya.[5]

Sejarah

Saus shacha juga dikenal sebagai sate dalam dialek Teochew dan Hokkien, mencerminkan asalnya dari saus sate yang diperkenalkan oleh orang asing Min Nan yang kembali ke Tiongkok dari Asia Tenggara .[6] Selama abad ke-20, buruh Tionghoa dari wilayah Chaoshan yang bekerja di negara-negara Asia Tenggara (misalnya, Malaysia dan Indonesia modern) mengadaptasi saus sate dengan selera lokal, termasuk memperkenalkan makanan laut kering.[6] Shacha kini cukup berbeda dengan sate bumbu kacang yang populer di Malaysia dan Indonesia.[7] Setelah Perang Saudara Tiongkok, imigran Chaoshan bermukim kembali di Taiwan dan memperkenalkan saus shacha ke daftar kuliner Taiwan .[6][8] Salah satunya, Liu Lai-chin, pemilik toko mie berbasis di Tainan yang berasal dari Chaoshan, menciptakan merek ikonik Bullhead (牛頭牌) dari saus shacha pada tahun 1958.[6][8] Pada tahun 1960-an dan 1970-an, ketika konsumsi daging sapi perlahan-lahan mulai diterima secara budaya di Taiwan, saus shacha menjadi lebih populer di kalangan penduduk setempat.[6]
