Wire Monkey is an American manufacturer of bread lames—tools used to score bread dough before baking—based in Fairfield, Connecticut. Founded in 2018 by Tyler Cartner, the company makes wooden-handled lames and is known for a circular model marketed as the "UFO".[1][2]
History
According to an interview with founder Tyler Cartner, the business began in 2018: his wife had started baking sourdough bread around the time he finished building a custom CNC machine, and after seeing her score dough with a razor blade attached to a coffee stirrer, he began making lames. He developed a circular design he called the "UFO", which became the basis of the company.[2] Wire Monkey is a small, family-owned business based in Fairfield, Connecticut, where its products are designed, manufactured and shipped.[2]
Products
Wire Monkey produces a range of lames with handles carved from hardwoods such as black walnut, used with standard double-edged razor blades.[1] Its circular "UFO" lames hold the blade between two discs, allowing the tool to be held at different angles for decorative scoring.[3] The engraving on one model, the UFO Bread Journey, was designed by the artist Anna Gabur.[2] Other models include the Goose, which places the blade at the end of a long, curved wooden handle.[1]
Reception
In a guide to bread-making tools, Wirecutter named the Wire Monkey Goose its top pick for the best bread lame, describing it as providing "fine control over slashes"; the reviewer added that the company "claims to have invented the now-iconic UFO lame".[1] America's Test Kitchen selected the Wire Monkey UFO Bread Journey as its recommendation for intricate scoring, citing the control it offers for detailed designs.[3]
