Pou Chong Foods is a family-owned food processing company based in Kolkata, India. Founded in 1958 by Lee Shih Chuan, a member of the city's Hakka Chinese community, the company is known for developing a green chilli sauce that became widely associated with Indian Chinese cuisine.[1]

Originally operating from a single factory in the Tangra Chinatown area, Pou Chong expanded its portfolio to include more than 40 varieties of sauces and ready-to-eat products. Its products are used by street food vendors, households, and hospitality businesses across India.[2]

History

Founding and early years

Pou Chong traces its origins to the Hakka Chinese community in Kolkata, which settled in the Tiretta Bazaar and Tangra neighbourhoods from the late 18th century onward. Founder Lee Shih Chuan came from a family associated with traditional Chinese herbal medicine, a background that influenced his approach to sauce preparation and fermentation.[3]

In 1958, Lee acquired an existing sauce factory in Tangra. Noting the local preference for green chillies, he developed a blended chilli sauce incorporating Indian spices, including turmeric, with Chinese fermentation methods. The resulting product became known locally as a Kolkata-style green chilli sauce.[4]

The sauce was initially distributed locally and gained popularity among street food vendors. It later became commonly used with Kolkata dishes such as kathi rolls and chow mein.

Expansion and modern era

The company is currently led by Janice Lee. In 2017, Pou Chong introduced the KIM brand, positioned as a premium line focusing on traditional Hakka recipes and higher-grade ingredients.

In 2018, the company entered the quick-service restaurant segment with "Ming Dimsum by Pou Chong" in Kasba. It also operates wholesale and retail outlets in Tiretta Bazaar and Lu Shun Sarani. Pou Chong is recognised as a Star Export House by the Government of India and exports its products through distribution partners.[5]

The company produces Chinese and Indo-Chinese food products.

Cultural significance

The name "Pou Chong" translates roughly to "a comfortable and safe journey". The company logo, depicting a wooden ship with yellow sails, references the migration of Chinese settlers to India. Pou Chong is frequently cited in reporting on Kolkata’s Chinese-Indian community and its influence on the development of Indian Chinese cuisine.
