Époisses de Bourgogne adalah keju dari daerah Burgundia di negara Prancis yang dibuat dari susu sapi yang sudah dipasteurisasi.[1]Menurut legenda, keju ini pertama kali dibuat oleh para biarawan dari ordo Cistercian pada awal abad ke-16.[1] Namun, dengan ditemukannya batu yang digunakan untuk pengeringan dan juga gudang tempat keju dimatangkan di daerah Epoisses sebelum abad ke-19 maka dapat dinyatakan bahwa yang memproduksi keju ini pertama kali adalah para petani wanita.[1] Petani wanita tersebut mengembangkan cara lama dalam membuat keju dan menurunkan hal tersebut kepada anak-anaknya.[1] Susu yang digunakan untuk membuat keju ini diasamkan dengan menggunakan bakteri asam laktat.[1] Kemudian keju tersebut dimatangkan dengan waktu minimal 4 minggu.[1] Selama proses pematangan berlangsung maka keju-keju ini dicuci dengan menggunakan sikat kecil untuk meratakan penyebaran bakteri padak kulit keju.[2] Pencucian terakhir adalah dengan Marc de Bourgogne, yaitu brendi dari daerah Burgundia.[1][2]
